When I still lived in Providence, RI, we had the cutest little bakery down the street and my absolute favorite thing to get there was this sandwich. Since moving, I have been making it myself at home and it still is my absolute favorite sandwich. It is the perfect thing to take on a picnic. You can make it look pretty with some wax paper and ribbon. Add fresh fruit, some cookies and a crisp bottle of Rosé and you have picnic perfection. Enjoy!

THE MOST DELICIOUS PICNIC SANDWICH
INGREDIENTS:
A good loaf of baguette
Arugula
Roasted Red Peppers
Fresh Mozarella
Prosciutto
Fresh Lemon Juice
Good Olive Oil & Vinegar ( my absolute favorite is from Seasons Annapolis)
HOW TO:
Slice Baguette into sandwich size pieces and cut open
Drizzle with good olive oil and balsamic vinegar
Toss Arugula with oil, vinegar fresh lemon juice and salt & pepper
Layer Arugula, Roasted Red Peppers, Mozarella and Prosciutto
Drizzle with more oil & vinegar
Enjoy!
If you are taking this on a picnic, I recommend taking the oil & vinegar seperate and drizzle on right before enjoying! This salad makes a great side dish.
