Date Night at Home – Valentine’s Edition ❤️ Marry Me (Again) Chicken


Is there a better time to kick off our Date Night at Home series than Valentine’s Day? Skip the overpriced restaurants and make a romantic dinner at home with a nice bottle of wine and this incredible Marry Me (Again) Chicken dish that is as pretty as it is delicious. Bonus: you only use one pan to make the whole thing, so clean-up is super easy. (Except for boiling pasta).

You can kick off the evening with a signature cocktail if you like. I love this one. Put on a fun, romantic playlist, light candles, and start cooking. In our 25 years of marriage, we have always tried to keep our relationship a priority. It was hard at times, but I give Aaron credit for making date nights happen our entire marriage, even when it was difficult, not to mention expensive, and we didn’t have the money. But now that we are empty nesters, we have a good relationship and a lot of fun together. It is almost like we are dating again, and I am here for it. Aaron and I have always enjoyed good food and going out to eat. When we first started dating, we also loved cooking together. This has been a fun way to connect over a shared interest. The most important thing for this dish is QUALITY ingredients. I have loved Season Olive Oil for a long time and can not say enough about their offerings. During the warm weather months, I throw together a salad, and the only dressing I need is some of their olive oil and vinegar. It is truly divine.

I am lucky that I can visit their taproom anytime in our lovely downtown Annapolis, but they have a total of 5 locations and ship anywhere in the United States so that you can get some of their goodness as well.

The show’s star for this recipe was their Bacon Infused Olive Oil. It truly set this dish apart and made it special. It is also great for grilling chicken and can be used anywhere you typically use bacon. So delicious! Anyway, without further ado, here is the recipe. 2 Boneless Skinless chicken breasts, slice and pound thin
2 cups Brussels Sprouts, trimmed and halved
16 oz bowtie pasta, slightly undercooked
1 cup heavy cream
1/4 cup Seasons Bacon Infused Olive Oil
1/3 cup Seasons Bourbon maple-infused Balsamic Vinegar
1 Tablespoon Seasons Fleur de Sel
1 Tablespoon Bella Cucina Tomato Pesto
1 Tablespoon Seasons Cowboy Rub
1 Tablespoon butter
1/4 cup fresh chopped flat-leaf parsley for garnish
3 tablespoons water

After slicing the chicken lengthwise and pounding it thin, season with Fleur De Sel and Cowboy rub, heat the Bacon Olive Oil in a 16-inch pan and add chicken breast.

Sear on medium-high heat on each side until brown, about 2 minutes a side, adding butter halfway through.

Remove from pan and set aside.  Add Brussels Sprouts to pan and water and cook for 2-3 minutes.

Once the water has cooked away, lower the heat to medium, add tomato paste, and stir.

Add Bourbon Maple Vinegar and cook until thickened for 2 minutes.

Add Chicken back to the pan with heavy cream and partially cooked pasta.

Stir to combine and allow to simmer for one minute on low heat. Garnish with chopped fresh parsley.

It pairs beautifully with a chilled Rosé. Whispering Angel is my favorite.
